The new menu continues this tradition, presenting a contemporary interpretation of the classic dishes that cemented the restaurant’s reputation as a pioneer in premium dining in Manchester.

The vision for Australasia was initially crafted by founder the late great Tim Bacon, whose personal experiences and deep knowledge of his homeland’s cuisine informed the restaurant’s identity. The original menu was a tribute to the bold flavours of Asian cuisines, drawing inspiration from Japan, Vietnam, Thailand, and China. This latest menu iteration retains those influences but offers a fresh perspective that highlights the diverse food cultures that define Modern Australia .

The new menu features dishes designed to delight and surprise diners. Expect vibrant flavors, locally sourced ingredients, and innovative techniques that reflect the dynamic nature of Australian cuisine. Dishes such as Obsiblue Sashimi Prawns with mango puree and sweet ginger vegetables from the small plates and Robata Grilled Barramundi with truffled celeriac puree, artichoke, cherry tomato and yuzu dressing from the larger plates section, showcase a commitment to excellence and creativity.
